AIR FRYER PESTO TOFU CAULIFLOWER GNOCCHI

Directions:

1. Thaw the cauliflower Gnocchi (I leave it in my fridge overnight).

2. Press the tofu (simply cover it with paper towel & apply a steady weight to squeeze out moisture). 

3. Then, cut the tofu into cubes.

4. Transfer the tofu and the Cauliflower Gnocchi into a baking sheet covered with parchment paper.

5. Spray with avocado oil and sprinkle in salt, garlic pepper, oregano, paprika and black pepper.

6. Air fry for 20 minutes tossing halfway though! (400F)

7. Toss with pesto and serve over arugula. Sprinkle with feta cheese.

10 oz Firm Tofu
1 bag Cauliflower Gnocchi
2 tbsp avocado oil (I use the spray)
1 tsp oregano
1/2 tsp garlic salt
1/3 tsp black pepper
2 tbsp pesto
1 1/2 c arugula
Handful of fresh basil
1/4 c dairy-free feta
