CAULIFLOWER FARRO HARVEST BOWL

 

Directions:
CAULIFLOWER:
1. Remove the stem ends cut the cauliflower into florets.

2. Steam for 7-10 minutes.

3. Place on an air fryer basket covered with parchment paper and drizzle with olive oil, salt, pepper, garlic powder and Parmesan.

4. Air fry for 10-15 minutes. Time varies depending on your air fryer.

ARUGULA SALAD:
1. Toss arugula with olive oil, salt, pepper, parmesan and red pepper flakes.

2. Build your bowl by adding farro, cauliflower, arugula salad into the bowl.

3. Then add in the 8-minute boiled eggs, avocado, kalamata olives 🫒 and sprinkle with feta cheese.

4. Drizzle everything with tahini and lemon juice.

5. ENJOY!
