CORN CUCUMBER SUMMER SALAD

 

Ingredients:
2 hard-boiled eggs
3 Persian cucumbers, sliced thinly
1 cup sweet corn
1 cup radishes, sliced thinly
1/4 c fresh parsley, chopped
1/4 c fresh dill, chopped
1/4 c green onion, chopped
1-2 tbsp olive oil 
1/2 avocado
Juice of 1/2 lime
1/4 tsp dried oregano
Salt + pepper to taste
4-6 slices halloumi*

 

Directions:
1. Preheat a pan over medium-high heat.

2. Grill the halloumi for 2-3 minutes on each side.

3. In a large bowl, combine the radish slices, cucumber slices, sweet corn, scallions, parsley, dried oregano & dill.

4. Slice avocado into cubes, chop up boiled eggs and add into the bowl.

5. Juice the lime into the bowl.

6. Toss well, drizzle with olive oil and sprinkle with salt, pepper and serve.

*This salad pairs perfectly with chicken, shrimp or tofu if you prefer instead of halloumi.
