CURRY CHICKEN SALAD SANDWICH

 

Ingredients:
1 pound shredded chicken
1/2 lemon, juiced
1/2 tbsp curry powder
1/2 tsp turmeric powder
1/2 tsp garlic powder
1 tsp oregano
1/4 tsp black pepper
1 carrot (1.2 c shredded)
1/2 c raisins
1 small shallot, chopped
1/2 cup avocado oil mayo
salt to taste

Directions:
1. Prepare the chicken. Add water to a medium pot, bring to boil.

2. Add salt and dash of garlic powder.

3. Transfer the chicken into the pot and boil for 15 minutes. (Internal temperature of the chicken should be 165F).

4. Remove the chicken from the pot and add it to the bowl.

5. Season with more salt, garlic powder and let rest for 5-10 minutes covered.

6. Using a fork shred the chicken. Add the remaining ingredients and mix well.

7. Serve as a sandwich with some arugula and enjoy!
