DAIRY-FREE CREAMY CAULIFLOWER CURRY SOUP

 
 
 
 

Ingredients:
(1) can light coconut milk
(2) cup chicken broth
(3) tbsp plive oil
(1/2) celery root, peeled and cut into cubes
(2) heads cauliflower (2 lbs)
(2) tsp curry powder
(1) tsp paprika
(1) tsp smoked paprika
(1) jalapeño
(1/2) cup chickpeas, rinsed and drained
black pepper to taste
(1) tsp garlic salt

Directions:
1. Add cauliflower and celery root into a pot with boiling water. Boil for 15 minutes.

2. Drain the cooked cauliflower and celery root and add to a blender with coconut milk, chicken broth & spices. Blend until smooth.

3. Transfer the soup back into the pot, add olive oil and bring to boil.

4. Serve the soup and top with in chickpeas, jalapeños and crushed black pepper. Enjoy!
