GF DOUBLE CHOCOLATE PROTEIN ALMOND FLAX BANANA BREAD MUFFINS

 

Ingredients:
3 ripe bananas
1/4 cup flax meal
1 cup super fine almond flour
1 cup gluten-free oat flour
1 teaspoon baking soda
1/3 cup cocoa powder
2 eggs
1 1/2 tsp cinnamon
1/4 cup milk of choice
1 tsp vanilla extract
2 scoops unflavored protein (optional) - If you don’t use it, it won’t affect the texture, no worries
1/2 c sugar-free chocolate chips

 

Directions:
1. Preheat the oven to 350F.

2. Line a muffin pan with parchment baking cups.

3. In a food processor, blend together the nut milk, eggs, vanilla extract and bananas.

4. Stir in the the flours, cacao, cinnamon, flax meal, collagen and baking soda and mix until well combined.

5. Add chocolate chips.

6. Pour the batter into baking cups, add extra chocolate chips on top and bake for 20-22 minutes.

Enjoy!

You can freeze them and they’re good for up to 30 days!
