GLUTEN-FREE TUNA PASTA SALAD

Ingredients:

8 oz gluten-free brown rice or cassava pasta
1/2 c red onion, finely chopped 
juice of 1 lemon 
2 cans tuna in olive oil (200 g)
1/3 c fresh parsley, chopped
2 c arugula
1/2 c kalamata olives 
1/3 c crumbled feta
2 tbsp olive oil
salt + pepper to taste

Directions:

1. Cook the pasta according to the instructions on the box.

2. While pasta is boiling, add salt and 1 tbsp of olive oil to the pot. 

3. Drain the pasta, cover with lid and let it chill for 10 minutes.

4. Add arugula to the bowl, drizzle with 1 tbsp olive oil, add pasta and the remaining ingredients. 

5. Season with salt and pepper and toss everything until well mixed. 

6. Serve immediately or store in the fridge in an airtight container for up to 5 days.
