GRILLED PESTO CHICKEN TENDERS

 
 
 
 

Ingredients:
1.3 lbs chicken tenders
1/2 cup fresh pesto
1 tsp black pepper
salt to taste
1 tbsp parmesan cheese
1/2 juiced lemon

Preparation Directions:
1. Coat chicken fillets in the pesto and on all sides.

2. Drizzle with lemon juice. Season with salt and pepper.

3. Let it sit for 30 minutes to an hour to soak in the flavors. (You can leave it overnight in the fridge too for an easy prep).

Grill:
1. Preheat your grill or skillet over medium-high heat. (My grill is set to 400F).

2. Grill for 3-4 minutes on each side or until completely cooked through. (Check with the meat thermometer, the internal temperature should reach 165F).

3. Sprinkle with Parmesan cheese.

4. If you’re using chicken breast or thicker pieces of meat you’ll need to cook it longer. Transfer to a warm plate.

5. I served it over Frisée greens, cherry tomatoes, lemon juice + salt + pepper and we paired it with pasta!
