HARISSA TOFU

DIRECTIONS:
Tofu:
1. Cut your tofu into 1/2 inch thick slices. Then lay them on a paper towel, sprinkle with salt and place another paper towel on top. Then press the tofu by putting something heavy on top.

2. Preheat your pan at medium-high heat and add olive oil. Add tofu and cook for 3-4 minutes until brown on all sides.

3. Once the tofu is brown and firm, dd the harissa sauce to the pan with tofu, toss to coat and reduce the heat to low. Cook for 2-3 minutes and remove from heat.

Pasta:

1. Bring water to a rolling boil. Add salt as desired. Cook pasta on high heat, stirring frequently. Test for soreness and drain.

2. Add olive oil and toss well. Sprinkle with parmesan and red pepper flakes when serving.

Tofu:
10 oz Extra Firm Tofu
4 tbsp harissa + 2 tbsp water
1/2 tsp salt
2 tbsp olive oil

Pasta:
6 oz brown rice pasta
olive oil
2 tbsp parmesan
red pepper flakes
salt to taste
