JUICY ROSEMARY CHICKEN W/ GF GREEK PASTA SALAD

Juicy Rosemary Chicken Ingredients:
2 chicken breasts
1 tbsp EVOO
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
fresh rosemary
3-4 garlic cloves

GF Greek Pasta Salad Ingredients:
1/2 box of gluten-free pasta
olive oil
salt
black pepper
2 tomatoes
2 cucumbers
1 small shallot
fresh parsley
feta cheese

**If you are dairy-free, swap feta cheese from Pasta Salad for dairy-free cheese or add olives!

 

Juice Rosemary Chicken Directions:
1. Preheat oven to 400F.

2. Tenderize 2 chicken breasts with meat tenderizer and marinate in 1 tbsp EVOO, 1/2 tsp salt, garlic powder + black pepper, and fresh rosemary for at least 30 min.

3. Preheat your pan to medium-high heat, add 1 tbsp olive oil and infuse the olive oil by roasting 3-4 garlic cloves and 2 sticks of fresh rosemary in the pan.

4. Add chicken to the pan and cook for 4 minutes on each side.

5. Transfer to the oven and bake for another 5-6 minutes. I check my chicken with a meat thermometer, perfect temperature should be 165F!

6. Done!

GF Greek Pasta Salad Directions:
1. Cook 1/2 box of gluten-free pasta according to instructions.

2. Toss in olive oil and sprinkle with salt.

3. Chop 2 tomatoes, 2 cucumbers, 1 small shallot, and add feta cheese and fresh parsley.

4. Season with salt and black pepper and toss with chilled pasta.

5. Pair with your chicken and ENJOY!
