GLUTEN-FREE LEMON ALMOND COOKIES

Ingredients:
1/4 cup lemon juice + lemon zest from 1/2 lemon
1 tsp baking soda
1 egg
1/2 tsp salt
4 tbsp butter (room temperature)
1/2 cup + 1 tbsp maple syrup
1 1/2 cup cassava or brown rice flour
1 cup almond flour

 

Directions:
1. Preheat oven to 350F.

2. In a medium bowl combine together the lemon juice with lemon zest and add baking soda. Add in salt, maple syrup, and an egg. Mix well.

3. Add the remaining ingredients to the bowl and mix well using your hands. (the batter should be thick!)

4. Form 1 1/2 tbsp of batter into round balls.

5. Press each ball flat and bake at 350 F for 20 minutes. They won’t be brown because of the rice flour, make sure not to overbake them!
