TURMERIC CHICKPEA VEGGIE ORZO

Ingredients:
1/2 box orzo (8 oz)
2 garlic cloves, minced
2 small red peppers, sliced
1 cup mushrooms
1 tsp turmeric
1 cup chickpeas
black pepper
salt
EVOO
shrimp (optional)

 

Directions:
1. Boil the Orzo according to the box instructions. In the meantime, sauté mushrooms in a pan coated with EVOO until almost ready.

2. Add in bell peppers and cook for 5-7 minutes or until ready.

3. Add minced garlic, salt, pepper, and turmeric.

4. Mix well and add to the Orzo along with chickpeas.

5. Pair it with my Corn & Pickle Salad and done!

Corn & Pickle Salad:
Combine:
1/2 can sweet corn
1/2 c chopped pickles
Fresh or dried dill and a sprinkle of black pepper.

Mix it all up and enjoy!
