PEACH SALSA SHRIMP TACOS

 

Ingredients:
For the peach salsa:
1 c peaches, diced
2/3 c tomato, diced
1/2 c red onion, diced
1 cup cilantro, chopped
Large handful fresh basil, chopped
Juice of 1 lime
Salt
Pepper

For the tacos:
1 - 1 1/2 lbs shrimp, peeled and deveined
1-2 tbsp olive oil
Garlic powder
Paprika
Oregano
Salt
Pepper
Tortillas of choice

Directions:
Add the peaches, tomato, red onion, cilantro, lime juice, salt, and pepper to a bowl and mix to combine.

Pat the shrimp dry and toss with olive oil and spices.

Coat your pan with olive oil and preheat to medium-high temperature. Add shrimp and cook for 1.5-2 minutes per side. Be quick and prepared to flip it :) 

Warm the tortillas, fill with shrimp and peach salsa, and enjoy.
