PILLOWY GF LEMON RICOTTA WAFFLES

Ingredients:
1 cup super fine almond flour
1/2 cup cassava flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 tbsp maple syrup
lemon zest from 1 whole lemon
2 tbsp avocado oil
2 eggs
1 tsp vanilla extract
fresh juice from a whole lemon (about 3 tbsp)
1/2 cup ricotta cheese
3/4 cup almond milk

Directions:
1. In a medium bowl, whisk together almond and cassava flours, baking powder, baking soda, and salt.

2. In a small bowl, mix together maple syrup and lemon zest until the syrup is scented with lemon.

3. Combine the lemon maple with the dry ingredients and whisk together.

4. Grab another bowl and whisk together vanilla, eggs, avocado oil, lemon juice, ricotta, and almond milk.

5. Add the wet ingredients all at once to the dry ingredients and stir to combine. Do not over mix the batter!

6. Heat you waffle and spray with oil if needed. Dollop batter into the waffle iron and cook until golden brown!

7. Serve immediately with whatever toppings you love and enjoy!
