RASPBERRY COCONUT CHIA PUDDING

 

Makes 3-4 servings
Ingredients:
1 cup Raspberries, fresh or frozen
1 c cup cashew milk
1/2 cup coconut milk, full fat
1 tsp vanilla extract
1 tbsp fresh lemon juice
2 tbsp shredded coconut
1/4 - 1/3 cup chia seeds
2 tbsp shredded coconut, unsweetened
1 - 2 tbsp maple syrup (OPTIONAL)
WHIPPED CREAM!!!

 

Directions:
1. In a mason jar, combine the coconut milk, cashew milk and chia seeds.

2. Add in vanilla extract, lemon juice, shredded coconut and mix well. Then, add in the raspberries and using a fork mash them up in a jar.

3. Refrigerate overnight. Serve with whipped cream and extra raspberries!
