BANANA MUFFINS (VEGAN)

 

Ingredients:
2 spotty bananas
1/4 cup flax meal
1 cup oat flour
1 cup almond flour 
1/2 c coconut sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/4 c coconut oil, melted
3/4 c nut milk 
2 tsp vanilla extract
1/4 tsp salt

 

Directions:
1. Preheat the oven to 350F.

2. Line a muffin pan with parchment baking cups.

3. In a food processor, blend together bananas, vanilla extract, coconut sugar, melted coconut oil and nut milk. Blend until smooth.

4. In a medium bowl, combine the remaining dry ingredients: flax meal, oat flour, almond flour, baking powder, baking soda, cinnamon and salt. Combine wet and dry ingredients. Mix well and pour the batter into baking cups.

5. OPTIONAL: slice up another banana and add on top of each muffin cup filled with the batter.

6. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.

Drizzle with melted coconut (optional) and enjoy!
