High Protein Cottage Cheese Scrambled Eggs

 

Ingredients:
2 eggs
1/2 c cottage cheese
Pinch salt and pepper
1 tbsp olive oil for cooking

Directions:
Whisk  eggs, cottage cheese and add salt and black pepper. Whisk the mixture well. Preheat a pan to medium heat and coat it with olive oil. Pour the egg mixture into the pan, then lower the heat to medium-low and let the eggs sit for 30 seconds. Lower the heat to low and slowly start moving the eggs around with a spatula and cook them until cottage cheese curds begins to melt away, nice and creamy. The secret to success in this recipe is cooking them low and slow. Serve the scrambled eggs with your favorite side. 

I paired them with a bagel topped with peanut butter and banana, along with a side of blueberries. They also taste great on top of avocado toast. Enjoy!
