High Protein Cottage Cheese Scrambled Eggs

 

Ingredients:
2 eggs
2 heaping tbsp cottage cheese
Pinch salt and pepper
1 tbsp olive oil for cooking

Directions:
Whisk eggs cottage cheese and add salt and black pepper. Whisk the mixture well. Preheat a pan to medium heat and coat it with olive oil. Pour the egg mixture into the pan, then lower the heat to medium-low and let the eggs sit for 30 seconds. Slowly start moving the eggs around with a spatula and cook them until cottage cheese curds begins to melt away, which usually takes 1-2 minutes. Serve the scrambled eggs with your favorite side.

I paired them with a bagel topped with peanut butter and banana, along with a side of blueberries. They also taste great on top of avocado toast. Enjoy!
