What I Eat in a Day

Most of what I eat in a day! and a little reminder that eating enough matters!
High protein, fiber-rich, and built to actually fuel my body, not underfeed it. 

Pre-workout snack:

Bagel+ cottage cheese + honey paired with coffee.

Breakfast

my silky protein yogurt bowl topped with granola, kiwi, & ground flaxa
avocado toast on stone milled whole wheat + a fried egg, extra kiwi

Lunch

Sardine Salad Wrap
Apple
Hu Chocolate

Ingredients:

Lavash (I love Atoria’s Lavash)
2 tbsp Labne
1 can sardines in EVOO
1 small carrot, finely chopped
2 tbsp capers, drained
handful of cilantro, chopped
2 tbsp red onion, finely chopped
1/2 celery stalk, finely chopped

Yogurt Sauce: 2 tbsp greek yogurt, 1 tbsp dijon mustard, 1 tbsp lemon juice, salt + pepper to taste

Directions: in a bowl, mash up the sardines, then and add carrots, celery, capers, cilantro, red onion, greek yogurt, dijon mustard, lemon juice salt and pepper. Warm up the lavash, I like to throw it in the air fryer for a a couple of minutes. Spread labne over the lavash and top with the sardine salad. Roll it up, slice in half and enjoy!


Dinner

Rice Bowl With Chicken and Greek Salad

Chicken Kebab:

1.5 Ib boneless chicken breast, cut into strips
2 tbsp plain yogurt 
Juice of 1/2 lemon 
1 tsp coriander 
1 tsp paprika
2 tsp smoked paprika
1 tsp salt or season to taste 
1/2 tsp cumin
2 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 1/2 tbsp oregano
1 tbsp olive oil for marinating
1-2 tbsp olive or avocado oil for cooking

Directions:
Mix the chicken with yogurt, lemon juice, olive oil, and spices. Let it marinate for at least 2 hours or overnight if you can.

Heat a large pan over medium-high heat with oil. Once hot, cook the chicken for about 8–10 minutes, stirring occasionally, until fully cooked, golden, and slightly charred. Remove from the pan to prevent overcooking. 

Greek Salad:

Persian cucumbers
Cherry tomatoes
Red onion
Lots of feta
Green onion
Olives
Oregano
Salt + Pepper
Olive oil
